A lamington is a sponge cake that is covered in chocolate and coconut. This Australian icon ranks right up there with Pavlova and Vegemite. It is believed to be invented by accident over 100 years ago. Charles Wallace Alexander Napier Cochrane-Baillie (Lord Lamington) has been credited with the discovery of the lamington. The maid for Lord Lamington (eighth governor of Queensland) accidently dropped a sponge cake in some melted chocolate. So that the sponge cake would not be messy, they added coconut. The result was a delicious new invention, named after Lord Lamington.

Ingredients For Cake
1/2 cup butter3 eggspinch of salttsp vanilla3/4 cup sugar1 1/2 cups self raising flour1/2 cup milk
Ingredients For Icing
2 cups icing sugar1 big tablespoon butter1/3 cup cocoa1 tsp vanilla3 cups coconut4 tablespoons boiling hot water1/2 cup milk
Process
- Cream the butter and sugar together for about 8 minutes
- Then beat In the eggs and vanilla
- Mix in milk and flour with the mixture
- Pour the mixture into a greased square baking tray
- Put in oven and bake for 30 mins on 180 C
- Allow the cake to cool
- Once the cake has cooled, cut the cake into squares
- To add the icing, add all of the ingredients for icing, except the coconut, with boiling water in a bowl until it is quite thin
- Coat the square pieces with the icing
- Roll the lamingtons in the coconut
- Leave the lamingtons in an airtight container and leave in the refrigerator for a couple of hours (preferably overnight)
