It is believed to be invented by accident over 100 years ago. Charles Wallace Alexander Napier Cochrane-Baillie (Lord Lamington) has been credited with the discovery of the lamington. The maid for Lord Lamington (eighth governor of Queensland) accidently dropped a sponge cake in some melted chocolate. So that the sponge cake would not be messy, they added coconut.
